Bacon-Wrapped Chicken-Mushroom Kabobs

Ingredients

  • 2 whole large chicken breast, skinless and boneless(used thighs)
  • 10 large mushrooms, cut in 1/2
  • 1/4 cup soy sauce( used lite)
  • 1/4 cup cider vinegar
  • 2 Tbs honey
  • 2 Tbs salad oil( used olive oil)
  • 8-oz can of sliced pineapple
  • 8-oz package of sliced bacon

Instructions

  1. Cut each chicken breast in 1/2 then cut each 1/2 into 5 chunks.
  2. Place the chicken chunks, mushroom halves, soy sauce, vinegar,honey and oil in a large bowl. Set aside.
  3. Cut the pineapple slices into 3 pieces.
  4. Cut the bacon in 1/2 crosswise. Wrap each bacon 1/2 around a piece of chicken and mushroom 1/2.
  5. Thread onto 4" long skewers alternating with the pineapple slices. Reserve the marinade.
  6. Grill indoors or outside on the grill for about 15-20 minutes brushing frequently with the reserved marinade. Can also be broiled as well.
