Bacon Breakfast Cupcakes
Ingredients
- 20 oz shredded potatoes
- 2 T vegetable oil
- 1/2 t salt
- 1/4 t pepper
- 6 eggs
- 2 T milk
- 3/4 c crumbled crisply cooked bacon
- 3/4 c shredded cheddar
Instructions
- Heat oven to 400 degrees.
- Place foil liner in 12 muffin cups and spray with cooking spray.
- Mix potatoes, oil, salt, and pepper.
- Divide evenly among cups and press lightly.
- Bake 45-55 minutes or until golden brown.
- Beat eggs and milk. Stir in bacon and cheese.
- Firmly press potatoes in muffin cups with bottom of a 1/4 c dry measuring cup. Then top each with about 1/4 cup egg mixture.
- Bake 13-16 minutes or until knife comes out clean.
- Cool 5 minutes.
