Grilled Prime Rib
This worked perfectly for early January 2026. Used a 4 lb bone-in roast. Took 2 hours at 225. Took 12 minutes to hit 133 degrees when put on the 450 grill again.
Ingredients
- 4-5 lb Prime Rib (bone in)
- Coarse Salt
- Coarse Pepper
- Garlic Powder or Granulated Garlic
- Avocado or Olive Oil
- 1/4 tsp Dried Rosemary
- 1/4 tsp Dried Thyme
- 2 Sticks Butter
Instructions
- 24 hours to a few days before: Apply coarse salt to all sides and let sit in the refrigerator to dry. If not tied with string, tie around the roast with strings to hold it together when it grills.
- Pull roast and butter out of refrigerator a couple of hours before grilling.
- An hour before grilling: Preheat grill to 225. Put a heavy layer of pepper and garlic powder on the meaty sides.
- Mash the butter with rosemary and thyme. Layer this butter all over the top and sides of the roast so that it is covered. Place the roast on a cookie sheet or grated pan with a 9x12 or baking pan with sides beneath it to catch the drippings.
- Grill uncovered until the center of the roast is 115 degrees. Remove from grill.
- Turn grill up to 450. Let roast sit on the counter until grill is ready. Rotate roast every 5 minutes or so for even cooking. Pull at 132-135 for medium-medium well. Let sit lightly covered under aluminum foil for 30 minutes.
- Slice. If not as done as one would prefer, put in oven on warm for a few minutes.
- Strain drippings for a butter dipping sauce or make au jus.
