Swiss Steak
Ingredients
- 2 lbs beef bottom round
- 2 t salt
- 1 t black pepper
- 3/4 c all purpose flour
- 1/4 c vegetable oil
- 1 large onion
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 1 T tomato paste
- 14.5 oz can diced tomatoes
- 1 t smoked paprika
- 1 t dried oregano
- 1 T Worcestershire sauce
- 1 1/2 c beef broth
Instructions
- Preheat oven to 325 degrees.
- Cut meat with the grain into 1/2 inch thick slices and season on both sides with salt and pepper. Place flour into a pan and dredge the pieces of meat on both sides in the flour. Tenderize the meat until 1/4 inch thick. Dredge both sides once more and set aside.
- Add enough vegetable oil to cover the bottom of a 4-5 quart Dutch oven set over medium-high heat. Once the oil shimmers, add the steaks to the pan. Cook until golden brown on both sides, about 2 minutes per side. Brown all steaks.
- Remove the last steaks from the pot and add the onions, garlic and celery. Saute for 2 minutes. Add the tomato paste and stir. Add tomatoes, paprika, oregano, Worcestershire, and beef broth and stir. Return the meat to the pot. Cover the pot and place in oven for 1 1/2-2 hours.
