Potato Latkes
Ingredients
- 2 lbs. russet potatoes, peeled and shredded
- 1 small onion, chopped
- 3 T. crushed saltines
- 1 large egg
- 1/4 t. baking powder
- 1 1/2 t. salt
- vegetable oil for frying
- sour cream for serving
Instructions
- Combine the potatoes, onion, saltines, egg, baking powder, and salt in a bowl.
- Fill a large skillet with 1/4-1/2 inch vegetable oil and heat until very hot, but not smoking.
- Scoop 1/4 cupfuls of the mixture into the skillet and flatten each latke with a spatula.
- When golden on the bottom, flip over and continue frying until golden on the top. (2-3 minutes per side)
- Keep warm in a 200 degree oven until ready to serve.
