Potato Latkes

Ingredients

  • 2 lbs. russet potatoes, peeled and shredded
  • 1 small onion, chopped
  • 3 T. crushed saltines
  • 1 large egg
  • 1/4 t. baking powder
  • 1 1/2 t. salt
  • vegetable oil for frying
  • sour cream for serving

Instructions

  1. Combine the potatoes, onion, saltines, egg, baking powder, and salt in a bowl.
  2. Fill a large skillet with 1/4-1/2 inch vegetable oil and heat until very hot, but not smoking.
  3. Scoop 1/4 cupfuls of the mixture into the skillet and flatten each latke with a spatula.
  4. When golden on the bottom, flip over and continue frying until golden on the top. (2-3 minutes per side)
  5. Keep warm in a 200 degree oven until ready to serve.
