Flour Tortillas

Ingredients

  • 2 1/2 c. flour
  • 2 1/2 t. baking powder
  • 1 t. salt
  • 1/2 c. lard or vegetable shortening
  • 1 c. hot water

Instructions

  1. Combine flour, baking powder, and salt in a bowl.
  2. Add spoonfuls of lard and use a pastry cutter to combine until mixture resembles coarse crumbs.
  3. Slowly add hot water stirring to bring together. Knead dough 30-40 times or until it becomes a ball of dough and is less sticky. Cover with a towel and let rest for 1 hour.
  4. Roll into ping-pong size balls and cover again for 20-30 minutes.
  5. Heat a griddle to medium/medium-high heat. Roll out the dough until very thin and place tortillas onto the griddle one by one. Cook each side for 20-30 seconds. Remove and stack keeping covered with a towel to keep warm.
