Chocolate, Chocolate Chip Muffins
Use cake tester to check doneness, especially with the large muffins.
Ingredients
- 6 squares (1 oz ea) semi-sweet chocolate
- 1/3 c butter or margarine (5 1/3 T)
- 3/4 c buttermilk
- 1/2 c sugar
- 1 egg lightly beaten
- 1 1/2 tsp vanilla
- 1 2/3 c flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 c milk-chocolate chips
Instructions
- Melt chocolate with butter and let stand to cool 10 minutes
- Mix chocolate mixture with milk, sugar, egg, and vanilla
- Mix dry ingredients then make well in the center, add chocolate mix and stir to combine. Stir in chips
- Spoon batter into cups - bake at 400 degrees for 20-25 minutes
