Beef and Vegetable Stir-Fry (Mom and Dad’s)
Ingredients
- 1 lb. beef or chicken cut into bite size pieces
- 1 1/2 c. broccoli cut into bite size pieces
- 3 carrots, sliced
- 1 t. cornstarch
- 1 t. salt
- 1/2 t. sugar
- 2 T. soy sauce
- 2 T. dry sherry
- 2 T. oil
- 1 onion cut into wedges
- 1 c. mushrooms cut into wedges
- 1 c. pea pods
- 1/2 c. sliced water chestnuts
- 1/2 c. bamboo shoots
Instructions
- Mix cornstarch, salt, sugar, soy sauce, and sherry. Set aside
- Heat oil in wok over high heat. Stir-fry broccoli, carrots, and onion for 2 minutes. Remove from wok.
- Add half of the beef (chicken) to walk and stir fry until browned. Remove and add the rest of the beef (chicken) and stir fry until browned. Return all meat to the wok and add the pea pods, water chestnuts, and bamboo shoots.
- Stir the soy mixture and add to the wok. Cook until thickened and bubbly.
- Return the vegetables to the wok and cook 1 minute more.
